My kind of Minestrone

It was pretty chilly earlier this week so I decided to whip up some minestrone soup my way! Whats my way you ask? Uh, with nothing but organic produce and lots of love DUH!

Carrots, celery, potato, cannelloni beans, diced tomatoes, swiss chard, rosemary, sprinkle some parmesan on top (because cheese makes everything better).

The recipe also called for pancetta which adds incredible flavor, but since I am super weird about meat (for moral, ethical and dietary reasons) I wasn’t sure what I was going to do. Luckily I found some uncured chopped up pancetta (I would have needed to chop it anyways) from Whole Foods. It had zero nitrates and came from pork that was fed a vegetarian diet with NO antibiotics. The little fat it had completely melted down into the broth and it was fabulous.
